Cooking with you can also encourage healthy eating habits and build self-esteem. Plus, they get a chance to practice motor skills through things like pouring, stirring and measuring. Fruit kabob
Apple
Banana
Seedless grapes
Pineapple chunks
Nonfat yogurt
Dried and shredded coconut

Knox blocks
4 packages Knox unflavored gelatine
3 packages JELL-O any flavor
3 cups boiling water

Quesadilla
Flour tortillas
Grated monterey jack cheeese
Chopped tomato
Chopped green onion
Chopped bell pepper

Deviled eggs
Eggs
Mayo
Mustard
Salt
Pepper
Olives
Parsley
Paprika

Irish soda bread
4 cups of flour
Water
1 Ĺ tsp salt
1 teaspoon baking soda
2 cups buttermilk
How-To
Fruit kabob
First prepare your fruit by washing it. Peel the banana and cut your fruit into small pieces.

Place sliced fruit into a large bowl. Spread coconut onto another plate.

One at a time, slide pieces of fruit onto a skewer until the skewer is almost completely covered.

Roll your kabob in yogurt. Then roll your kabob in the plate of shredded coconut.

Knox blocks
Take four packages of Knox unflavored gelatine and 3 packages of JELL-O flavored gelatin and mix with 3 cups of boiling water. Stir until completely dissolved.

Pour your mixture into a large brownie pan approximately 13 X 9 inches in size.

Refrigerate for about 1 hour or until itís firm.

After itís set, cut into 1Ē blocks and serve. Store in a tightly covered container in your refrigerator.

Cheese quesadillas
Mix cheese, sauce, tomatoes, green onions, and bell pepper in a bowl.

Heat skillet until itís hot, then lay one tortilla on the skillet.

Spread cheese mixture from your bowl onto the tortilla.

Fold tortilla over and heat until cheese has melted and tortilla has browned slightly.

If you want, you can add strips of grilled chicken or beef to your quesadilla.

Deviled Eggs
First, make six hard-boiled eggs by boiling the eggs in water for about 4 or 5 minutes. Once the eggs are hard-boiled, remove the eggs from the water and place the eggs in cold water until the eggs cool down to room temperature. Peel off the hard egg shell under cold running water.

Cut the hard-boiled eggs lengthwise. Place the egg whites on a serving tray and separate the yolks into a bowl. Then mix in with the yolks a little mayo, mustard, salt and pepper. Fill each of the egg whites with a dollop of your mix. You can top off your deviled eggs with sliced olives or parsley or paprika.

Irish Soda Bread
Preheat the oven to 375įF. Grease a baking sheet or an 8-inch round cake pan.

In a large mixing bowl, stir together 4 cups flour, 1 1/2 tsp salt, and 1 tsp baking soda. Gently toss to mix more thoroughly. Add the buttermilk and stir briskly with a large fork until the dough holds together in a rough ball. Knead on a lightly floured surface for about 30 seconds, then shape into an 8-inch round about 1 1/2 inches thick.

With a sharp wet knife, slash a large X across the top about 1/4 inch deep. Place the formed dough on the prepared baking sheet or into the cake pan and bake for about 45 to 50 minutes, until it is nicely browned and the X has slightly spread open.

Transfer to a rack to cool and then wrap in a slightly damp towel and let rest, on the rack, for at least 8 hours.
